Strawberry Pina Colada

Oooh yeah we had fun with this one. It does require a few more ingredients and steps than some of the other cocktails on our recipe guide but it certainly is worth it.

You're basically making two equally delicious cocktails and combining them.

Here's what you'll need for 4 servings, because let's be real you're not busting out the blender for one or two cocktails (if you are, just half this recipe):

- 1.5 cups pineapple juice
- 1 cup frozen strawberries (about 10 whole)
- 2 cups frozen pineapple
- 1/2 cup cream of coconut (not coconut cream)
- 4oz white rum
- 2oz dark rum (optional)
- 2oz Strawberry Lemon Cocktail Syrup
- handful of ice cubes

Now you make it in two parts. Start with the strawberry mix by adding the following ingredients to a blender:

- 1 cup frozen strawberries
- 2oz white rum
- 2oz Strawberry Lemon Cocktail Syrup
- 1 cup pineapple juice
- about 4 ice cubes

Blend for about 30 seconds to a minute, then pour the mixture to a container and add to the freezer (btw - this makes a pretty darn tasty drink by itself). 

Rinse your blender and then add the classic Pina Colada ingredients:

- 2 cups frozen pineapple
- 2oz white rum
- 2 oz dark rum (optional)
- 1/2 cup pineapple juice
- 1/2 cup cream of coconut

Blend for about 30 seconds to a minute.

You're next move depends on how you'd like to present it. If you'd like nice layers like below, put this mix in the freezer alongside the strawberry for about 30 minutes. Pour the strawberry mix into the cup first, then use a spoon to add the Pina Colada mix. It looks real purdy.

If you're not too worried about the layering, grab the strawberry out of the freezer, pour it in a glass, then add the Pina Colada mix.

If you have any left over, it stores well in the freezer but might require being left out for a couple of minutes followed by a good stir to loosen it back up.
